Crocche’ Classic (Recipe)

Ingredients:

  • 2 lb (1 kg) potatoes
  • 2 tablespoons (40 g) butter
  • 1/2 cup (60 g) grated Parmesan cheese
  • 2 eggs, beaten
  • salt and pepper
  • pinch of nutmeg
  • one egg, beaten
  • bread crumbs

Method:

  • Boil potatoes, drain and sieve through a fine strainer.
    Add butter, cheese, beaten eggs, salt and pepper to taste and nutmeg.
    Shape into croquettes.
    Dip in beaten egg and roll in bread crumbs.
    Fry in oil until golden brown on all sides
