Savoury Cake (Recipe)


  • (Doses: 4 people)

Ingredients for the dough brisè:

  • 200g of flour type ’00
  • 100g of butter
  • 70ml of cold water
  • 1 pinch of salt.
  • Ingredients for filling:
  • 2 red peppers
  • 80g of bacon
  • 250g Ricotta Saint Lucia
  • 50g grated pecorino
  • 2 eggs
  • extra virgin olive oil
  • coarsely ground black pepper


Brisè To prepare dough, put in a blender at refrigerator butter and flour. Whisk until the mixture is dry and sandy. Then arrange it on a clean workbench and very cold (marble,metal or glass) to “fountain” and begin to knead pouring cold water. Knead just addingwater a little at a time until dough is smooth and elastic, wrap in plastic wrap and refrigerate for at least 40 minutes. Meanwhile, wash and cut the peppers into small cubes, being careful to remove all the seeds well. Ripassateli in a pan with olive oil andbake for 10 minutes on medium heat to make them crispy, then put them to cool.Meanwhile cut the bacon into cubes, brown in a frying pan and join it to the peppers. In alarge bowl the ricotta cheese , the cheese, eggs, and mix everythingthoroughly. Take the dough from refrigerator and roll it out brisè, leave on a round baking pan with parchment paper. After placing the dough in the baking pan with edgesthat come out, pour all the mixture of peppers and cheese and spread it evenly, fold theedges and put your cake in a preheated oven at 180 º for 25 minutes. Serve hot withlettuce salad as a side dish.
