Creme Brulee (Recipe)

Recipe

  • 450ml         Double cream
  • 150g            Egg  yolks
  • 75g              Caster sugar
  • 1                    Vanilla pod

Method

  1.  Bring the cream and the vanilla pod to the boil
  2. Whisk the yolks and the sugar together
  3. Pour half the cream onto the egg mix and mix well
  4. Pour the rest of the cream on and mix and stir
  5. Strain the mixture and fill ramekins or moulds
  6. Bake in a bain-marie at 150c for approx 35-40 min
  7. Chill.Glaze the top with a thin coating of caster sugar and caramelize with a blow torch
