Cheesecake (Recipe)

  1. 150g                  Digestive biscuits
  2. 50g                     Butter
  3. 300g                  Soft cream cheese
  4. 390g                  Double cream
  5. 115g                   Sugar
  6. ½                        Vanilla pod
  7. 2                          Gelatine leaves
  • Method
  1. Blitz biscuits and melt the butter.Mix togheter and divide into the  moulds and smooth.
  2. Whip the cream to a soft peak
  3. Cream the cream cheese,vanilla and sugar.
  4. Soak the gelatine in cold water and melt over low heat.Mix then into the cream cheese mixture
  5. Fold in the cream.Pipe the whole mix onto the set biscuit case
  6. Flush the top and chill
