Sacher Torte (Recipe)

  • Recipe
  1. 200g                        Butter
  2. 150g                        Sugar
  3. 4                               Yolks
  4. 200g                        Flour
  5. 4                              Egg whites
  6. 95g                          Dark Couverture
  7. 50g                          Cream
  • Chocolate glacage
  1. 15g                          Gelatine sheets
  2. 270g                        Water
  3. 320g                        Sugar
  4. 135g                        Cocoa powder
  5. 200g                        Whipping cream
  • Method
  • Sacher base
  1. Cream butter and 100g of sugar
  2. Add egg yolks
  3. Boil the cream and pour onto the chocolate.Add to the mix
  4. Whisk egg whites and remaining sugar,fold into the mix
  5. Fold in the flour and pour into a greased and floured tin
  6. Bake at 190 c
  • Chocolate glacage
  1. Soak the gelatine in cold water
  2. Boil the water ,sugar,cocoa powder and cream.Reduce until slightly sticky
  3. Add the gelatine to the mixture(do not forget to squeeze the excessive water from the gelatine)
  4. Cool down
  • Sacher torte
  1. Cut the sponge in two and soak with stock syrup and rum
  2. Fill with the apricot jam and coat with chocolate glacage
  3. Finish decorating with melted white chocolate
