Nougat glacè (Recipe)

Recipe

  • 375ml   Whipped cream
  • 65g       Fruit confit-Glace cherries,pistachios
  • 125g    Caster sugar
  • Water
  • 2   Egg whites
  • 125   Nougatine

Method

  1. Make the nougatine and blitz when cold
  2. Make an Italian meringue(121c)with the caster sugar and egg whites
  3. Whip the cream
  4. Fold the fruit confit into the Italian meringue,fold in the cream
  5. Pipe into moulds
